Pseudo-Pineapple Fried Rice

Just like the Western casserole is great for using up leftovers, so is the Asian fried rice! In my version of Pineapple Fried Rice, there’s a cup of crushed pineapple left over from a carrot cake recipe, two white mushrooms left over from cooking a green curry dish, and leftover rotisserie chicken from dinner the night before.

‘Pineapple Fried Rice’ 

4 cups cooked rice, preferably day-old rice
3 tbsp fish sauce
1 tsp chicken stock granules
1 tsp sugar
2 tbsp oil
1 small onion, chopped
2 cloves garlic, minced
2 large white mushrooms, sliced
1 cup cooked chicken, shredded
2 eggs
1/2 cup roasted unsalted cashew nuts
1/4 cup raisins (I left this out as hubby doesn’t like them)
1 cups crushed pineapple, drained
1/2 cup frozen green peas

Mix the fish sauce, chicken stock granules and sugar in a small bowl, set aside.

Heat up the oil over medium-high heat and saute the onion and garlic. Add in the mushroom and stir-fry till softened. Add in the chicken and stir-fry till warmed. Make a well in the middle of the wok and crack in the eggs. Scramble the eggs. Make a quick stir of the ingredients in the wok.

Drizzle in the sauce, pouring around the ingredients so it sizzles when it hits the hot wok. Add in the rice and break up large clumps by gently pressing down with the flat side of the spatula. You don’t want to crush the rice. Add in the cashew nuts, raisins, pineapple and green peas. Stir-fry to combine until the rice is hot and ‘pops’. Taste for seasoning.

French Fridays with Dorie: Cauliflower-Bacon Gratin

Mmm…this was a really good, savoury vegetable dish! Cauliflower, bacon, cheese, eggs, milk and cream. It makes a lot as you can see so it’s a good dish for a casual dinner party.

Christmas Ham

There was a Christmas potluck in my house and I said I will make a baked ham. It was going to be my first time and I spent some time looking up recipes and also comparing supermarket ham and ham from a butcher. I decided on buying a smoked bone-in ham from a meat shop in town. “Good ham comes from good pork,” the butcher said. It feels good to buy and eat locally too.

Next was the glaze. I decided to make one with ingredients on hand. Based on a Martha Stewart recipe, pure orange marmalade was blended with Dijon mustard and brown sugar for a sweet, slightly bitter and spicy taste. The ham turned out wonderful and the best thing is, it’s so simple to make as the ham is already cooked. No fears of serving undercooked meat to the guests!

The ham smelled so good when it was out of the oven. In the eagerness to slice and serve it, I forgot about taking pictures! There’s only a picture of me putting the cloves on after the first hour of baking, and the picture of the sliced ham above.

 

Orange-Mustard Glazed Baked Ham

3.5 kg (7-8 lb) bone-in smoked ham
1/2 cup Seville orange marmalade
1/4 cup tablespoons Dijon mustard
2 tablespoons light brown sugar (optional, to offset the bitterness of the marmalade)
1 tablespoons lemon juice
Cloves

Take the ham out of the refrigerator 1 hour before baking to let it come to room temperature. Rinse the ham, pat it dry and wrap tightly in parchment paper-lined aluminium foil. Place on a baking tray and bake on the lowest rack in a 325 degrees F oven for 1.5 hours.

Meanwhile, make the glaze. Bring the marmalade to a simmer in a saucepan and pour into a heatproof bowl. Add in the mustard, sugar (if using) and lemon juice. Puree the mixture you want a smooth sauce. (The sauce can be made ahead and kept covered in the refrigerator. Microwave till hot before using.)

After 1.5 hours, remove the ham from the oven and increase the oven temperature to 425 degrees F.

Unwrap the ham and score the fat in a diamond pattern. Place a clove in the centre of each diamond and brush half the glaze over the ham. Return the ham to the oven and bake for 20 minutes. Remove the ham and brush the remaining glaze over the ham and return it to bake till the glaze’s dark and caramelised, about 10 minutes. Remove to a cutting board and tent with foil for 10 minutes before slicing.

Salmon Burgers

I cooked dinner last night, just the second time since the arrival of my parents! I hope to share some of my mum’s cooking with you in time.

This salmon burger is easy to put together and cooks quick too. It uses fresh salmon and ground pork with potatoes and onions for extra bite. I make it with leftover grilled salmon too. My family likes these burgers including hubby who is not a fish fan. Hope you’ll like them too!

Salmon Burgers
(Adapted from Harumi’s Japanese Cooking)

12 oz fresh salmon, skinless and bonelesss
1 small onion, diced
1 tablespoon butter
1 small potato, peeled
4 oz ground pork (I use chicken)
1 egg, beaten
Salt and pepper

1. Chop salmon finely until it is almost ground.

2. Lightly cook chopped onions in the butter, taking care to retain the onion’s crisp texture. Leave to cool.

3. Boil the potato or microwave it till cooked. Mash and leave to cool (do not add any butter or milk).

4. In a large bowl, mix the chopped salmon and ground pork. Add the cooked onion, mashed potato and beaten egg, then season with salt and pepper.

5. Shape the mixture into small burgers. Heat some oil in a frying pan. Working in batches, fry the burgers for 2-3 minutes on each side till browned and the meat is cooked.

6. Serve with Ponzu sauce (or mix light soy sauce with lemon juice) or mayonnaise with coarsely ground black pepper.

Bacon Fried Rice, Etc.

It has been busy around here the past week. I would like to apologise to my blogger friends for not visiting and commenting on their new posts! My parents are here for a long visit – they arrived last Sunday night – and we had been organising the house in preparation for their visit. We made trips to Ikea, moved furniture about and threw out a lot of garbage! :)

I’m looking forward to learning more dishes from my mum. Just last night I watched her make my all-time favourite, Vinegar Pork Ribs, and it was great. No time for photos, just eat! This afternoon she whipped up a plate of fried rice for the boys’ lunch. It won’t be sandwiches every day for lunch when Grandma’s here!

Bacon fried rice with eggs and cucumber

2 cups cooked rice (left over or day old rice is best)
3 strips of bacon, cut into strips
2 eggs, lightly beaten
Half a medium yellow onion, chopped
1/2 cup of julienned cucumber
Light soy sauce
Dark soy sauce

Fry bacon in a skillet till crispy. Remove, set aside and drain fat from pan.
Pour in beaten eggs and scramble. Season with light soy sauce and pepper. Remove and set aside.
Add a teaspoon of oil and saute the onion. Add in the rice, season with the soy sauces and mix, breaking up clumps of rice. When the rice is warm, put in the bacon, egg and cucumber and mix well. Taste and season with more soy sauce if required. Serve.

Lastly, I doubt I’ll be posting before Thanksgiving (Canada celebrates Thanksgiving on October 10) so I would like to wish everyone celebrating Thanksgiving a Happy Thanksgiving and hope you’ll have a great day and meal(s) with your family!

We haven’t been celebrating Thanksgiving Day as 1) it wasn’t part of the culture in Malaysia and 2) we didn’t have family here to celebrate with. This year, however, my parents are here and we’ll celebrate! When you’re in Rome, do as the Romans do, eh? Since there’s just 6 of us, I won’t roast a full turkey but will make a turkey roulade instead. Hope it’ll turn out well and we’ll have a splendid meal. Here’s the menu I have in mind:

Turkey roulade
Potato gratin
Roasted vegetables
Pecan tart
Apple pie
