French Fridays with Dorie: Corn Soup

This is the first time I’m making corn soup. I’m not sure if corn soup is French but Dorie thinks it would have been had sweet corn been one of their native crops. This soup is delicious and, as Dorie said, quite substantial (probably due to the corn’s high fibre content and the whole milk!)

I got the corn from the Farmers’ Market that opens every Thursday in my town. Most of the farmers were selling peaches and cream corn and just one had a box of yellow corn.

The soup was easy to make – so glad for my immersion blender! I like that it has celery and carrot in it too. It’s a sweet soup with strong flavours from the herbs – rosemary and thyme. I thought my kids wouldn’t like it because of the mixed flavours but they finished their soup. I might use 2% or low-fat milk the next time I make this so it won’t be so filling. We had pizza for dinner with the soup and I couldn’t finish my pizza…

Dorie suggested a garnish for the soup comprising of corn kernels, chopped scallions, chile pepper or cayenne, chopped bacon, and creme fraiche for serving. I didn’t have any of these but I dropped some of the bacon bits from my pizza into the soup and they did go well! As Dorie explains, “because the soup is sweet, it takes well to salty additions…”

I’m going to take a look at other FFWD-er’s soup and see what garnishes and additions they added. You can find the recipe here.

    Next time I’m going to add some seafood to my soup. I thought it was a great base. Definitely needed the offset of the bacon and some spice!

    I used 2% milk and thought it was fine, not too filling. The Florida Pie you have posted looks nice, I’ll have to try that recipe.

    Agree with yummychunklet! I have only tried the sweet corn and chicken soup at Chinese restaurants and they are delicious

    We used 1% and I thought it was perfect for a summer soup. And I agree with you on the immersion blender. It took me 2 years to replace mine after the first one died and I don’t know how I went so long without one…

    I think it’s time for me to buy an immersion blender. My soup was very good, but not all
    that smooth. Tricia and I both enjoyed making this recipe, it was really quite simple.
    I could only find the white corn but I would love to make it with the yellow as you did, it
    has such a nice color.

    The salty bacon and the sweet soup were such a perfect combination. I used 1% milk and it worked well, not heavy at all.

    This looks so good! I have never tried making corn soup before, but I absolutely love corn! Wanted to buy immersion blender for so long….sigh!
    The cupcake cases I use is rather thick, unlike the paper ones. I’ve just recently purchased them in a pack and thought they are the normal paper cases. The inside of the cases are rather glossy and smooth, so they baked up beautifully without any trace of oil, perfect for display!

    Good thinking to add some of the bacon from your pizza – the sweetness of the soup really does need some salt! I’m glad your kids liked it enough to finish it, too!
